The Ube there is just as prized by the famous ube jam makers, and with good reason. They bleed when scratched with a fingernail, they have an excellent mouth feel (maligat) and when you cut them crosswise, it’s a rich violet color all the way to the center. Make homemade ube jalaya, with this perfect ingredient, you can. Try to keep it for Christmas, if you can.
