Living part-time in the middle of the rice bowl of the Philippines, we could not find it. It found us. This farmer came to us with several sacks last year and we took it all. She is back with friends, with a slightly bigger harvest. Galo is grown in kaingin (slash-and-burn) plots on remote mountainsides. This Galo in video was grown along the slopes of Mt. Tapao, in Dingalan, Aurora. The rocky mountain soil is not plowed but poked with a stick, and the Galo grows alongside natural vegetation, which accounts for the pandan-y smell when you cook it.
