BLACK AND WHITE. What we have here are some refined rock salt which we picked up from a seaside factory in Pangasinan. Black because the factory and the people there—father, mother, children, dog—live in perpetual soot, a by-product from burning rice husks to heat the sea water. (We worry for their lungs.) White because the salt comes out pristine, ready for consumption, life-sustaining. Not an easy life, what these salt makers have. Without them everywhere in the world there can be no salt, hence there can be no life.
We offered to pay twice what we should for this salt and they were surprised but happy to accept. We vacuum-sealed them at RuRi House—helps the salt keep, makes them presentable for gifting.
