TOMANGOES. After a trip to Guimaras Island for the Mango Festival, we were inspired to do an iteration of it at AyalaMalls Market! Market! That was last year. A Mango-All-You-Can-Eat event that was as brave as it was epic. We copied but innovated. Instead of promoting the already well-known Guimaras Mango, we promoted mangoes from different parts of Luzon. Of these mangoes, the best-received were the ones from Dingras, Ilocos Norte. Dingras is a little town, little known for it’s Mangoes, but that has changed with the success of Mango-All-You-Can-Eat. The happiest people were the farmers of Dingras. So we shall take those mangoes and combine them with those excellent Cherry Tomatoes from Tublay. Have you ever heard of Mango and Cherry Tomato Salad? Make it for the first time and enjoy.
